Māori meets Mexican! This is a great side dish, if you can get your hands on the right kind of potato.
Preheat oven to about 200°C.
Leaving their skin on, coat all potatoes with cooking oil.
Sprinkle paprika over the oily potatoes, to taste.
Place the potatoes on an oven tray with a rack and bake for about 45 minutes, or until a knife can easily be stabbed through.
Serve hot, maybe with some salt.
Hint: I've forgotten what my hint is. Just make sure that the paprika is rich red, otherwise its rich flavour is lost.
