Soy-Marinated Boiled Eggs

This is an interesting Japanese way to serve boiled eggs, but it does use plenty of liquid, which should be used for more marinated eggs, or someother oriental dishes.

Place eggs in a saucepan of cold water, and bring to the boil, after which reduce to a low heat and cook the eggs for 7 minutes.

For the marinade, combine soy sauce, vinegar and grated garlic in a bowl.

When the eggs are cooked, put them in cold water, crack the shells, massage the broken shells for a few seconds, then peel them off.

Place peeled eggs into the marinade, and let them marinate for at least 30 minutes.

Slice the eggs in half, and serve with the cut sides upwards.


Hint: the flavour depends on how long the eggs are marinated for. If you refrigerate them in the marinade, they can keep for up to 4 days.
